My Mince Pie Recipe

Happy Blogmas Day 21 🙂

In my family today was normally the day that the Mince Pies were all made. Me and my mum would spend all day making the pastry, filling them up and I’d sit in front of the oven watching them bake 🙂  So, to honour that,  I’m going to share my Mum’s simple recipe with you and hopefully you will like it 🙂

What You’ll Need: 

  • 225g cold butter cubed
  • 350g plain flour
  • 100g golden caster sugar
  • Pinch of salt
  • 280g mincemeat
  • 1 small egg
  • icing sugar, to dust
  • Cupcake tin

 

Method: 

In a bowl, rub together the cold butter, flour, sugar and salt and combine into a shortbread-like pastry, no need for liquid! cover and let it chill for about 30 minutes. While it’s chilling you can preheat the oven to 180C. Roll the pastry out and cut out small circles to fit into the cupcake tin. Rub the tin with a small bit of butter before putting the pastry into them to prevent sticking. Fill with Mincemeat and use a second circle of pastry to cover the top, pinch down the edges and brush with some egg. Bake for about 18-22 minutes then take out and let cool fully. When cooled, dust with some icing sugar 🙂

 

This simple recipe has been used by my family for years, and it makes delicious Mince Pies 😀

    You know I’ve never actually have ever tried mince pie, no one I know has ever made it- but now that I have this fabulous recipe I’m about to go ahead and make it myself 🙂 afterall, it seems easy enough!
