Christmas Sugar Cookies

Today I thought I’d share with you the simplest Cookie Recipeย I know ๐Ÿ˜Š Sugar Cookies can be baked at any time of year, but for me, I always have them at Christmas ๐Ÿ˜Š In college, a few of us used to have a competition on who could bake and decorate the best Christmas Cookie and this simple recipe always came up top ๐Ÿ˜Š

What you’ll need is:ย 

1 1/2 cups butter, softened

2 cups white sugar

4 eggs

1 teaspoon vanilla extract

5 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

In a large bowl, whip together the butter and sugar until smooth. Beat in eggs one at a time and add the vanilla. Stir in the flour, baking powder, and salt. Cover with cling wrap and chill dough for one hour minimum.

While the dough is chilling preheat your oven to 200 C or 400 F, then roll out the dough onto a floured surface until it is 1/4 to 1/2 inch thick. Using cookie cutters or a cup, cut it into any shape you wish, then place them 1 inch apart on ungreased cookie sheets. Personally, I like to put down a silicone mat, but it is not needed ๐Ÿ™‚

Bake for 6-7 minutes then takeย them out and place on a tray to cool. They will be very soft at first, but will harden up once cooled completely ๐Ÿ™‚
You can use any decorations you like on these, the choices really are endless, but you can never go wrong with some simple coloured sugar ย ๐Ÿ˜Š
