Happy Wednesday guys!! Hope everyone is having a great week so far. Can’t believe I’ve another week done on my healthy kickstart and I think I’ve done even better this week 🙂 My body started to miss meat this weekend and I found it very very hard not to have some of the beautiful Sunday Roast at my parents house, but I ploughed through it and got out the other side 😀
Speaking of dinner I created my own vegan shepherds pie that honestly is to die for! and all that’s needed is some tofu and veggie stock as a meat replacement 🙂
Vegan Shepards Pie
- 1 block plain tofu
- 2 veggie stock cubes(oxo works best)
- 5-7 potatoes
- 1 cup frozen peas
- 1 cup frozen baby carrots
- 1 tsp flour
- 1 tsp olive oil spread
Take the tofu and make sure it is well strained. crumble it up so it resembles feta cheese then lay it out on a baking tray and bake for 15 mins at 200c. After 15 minutes take it out and sprinkle one of the stock cubes evenly over it, then lower the temperature to 150c for another 15-20 minutes. While the tofu is baking wash and peel your potatoes and boil them until soft throughout. strain them and add the olive oil spread and mash to your liking. In a glass take a 1/2 cup warm water and mix in the flour and leave to one side. Then in a medium pyrex dish combine your veggies, flour mixture, the other stock cube and the tofu and place the mash on top and finish in the oven for 15 more minutes 😀 And you’re done! You can, of course, grate some vegan cheeses on top for the last 5 mins if you wish.
For exercise this week I’ve been walking a lot more. I’ve some great hills just down the road from my house and if you follow me on Instagram you will have seen some of the pics 🙂 but apart from that, I’ve been doing a few squats, lunges, jumping jacks, push-ups and crunches, just a few of each repeated a couple of times throughout the week. Eventually I hope to make these into a longer daily routine but for now, I’m happy with a few times a week 😀
As I said, I think this week was a better one overall but I know that this coming week will be harder as I have a lot lined up with work and I know its going to take its toll!
