Perfect Summer Drinks :)

Summer is almost here people and if like me you spent winter in one of the wettest countries in the world you will be oh so grateful to get the summer festivities started 🙂

May has always been one of the best months weather wise in Ireland and also the month where most places can really start to feel the heat of summer arrive. As you can image on all hot days it can be a godsend when someone comes along with an ice cold pitcher to drink so today I’ll tell how you can make two of my favourite summer drinks which can be adapted for  both for adults and  kids 🙂

 

Mango Mojito

What you’ll need for each drink

  • 2 limes
  • 8-10 mint leaves
  • 2 tsp sugar
  • ½ cup club soda
  • White rum(Bacardi is what I used)
  • ½ cup mango juice(no pulp)
  • Tall glass

Take half the mint leaves and cut one of the limes and gently crush them together in a glass. Take the second lime and add the juice from one half to the glass, and slice the other half. Take out the crushed lime and discard. To the lime and mint juice add the sugar and mix till dissolved. Measure out one serving of Rum then top with the club soda and mango juice. Finish it all off with some crushed ice and the rest of the mint leaves and slices of lime

And that’s it! The lime and the mint go so beautifully together but paired with the mango it adds that extra refreshing kick. For the kids just leave out the rum and add a little more club soda, or you could use some 7up or sprite 🙂

Strawberry Orange Lemonade

What you’ll need for one pitcher

  • 10-12 fresh strawberries (1 sliced to serve)
  • 1 ⅓  cup white sugar
  • 2 cups freshly squeezed lemon juice (3 slices to serve)
  • ½ cup freshly squeezed orange juice (3 slices to serve)
  • 8 cups of water
  • Very fine sieve
  • Blender
  • Pitcher

Take all but one of the strawberries and pop in a blender with a cup of water and a ⅓ cup of sugar and blend until perfectly smooth with no lumps. Slice the remaining strawberry for decoration later. Take the mixture and pass it through a fine sieve and add to the pitcher. Add the rest of the ingredients and give it a mix until everything is combined. Add a few slices of lemon, orange and strawberry and you’re good to go! Its best served chilled so place in the fridge until needed. If you want to add a bit of fizz replace half the water with club soda or even some champagne for the adult’s  😉
